Hello, I am Ashlee and I blog over at A Step in the Right Direction. I am a wife, new mom, and weight watcher. I have worked hard to be a healthier person. I struggle daily, but who doesn't? I am learning how to balance exercise, healthy eating, and having a baby in the house.
The first few months were tough. My husband and I did not know how to balance a newborn with the rest of our life. Now that Mason is getting older it is easier to get things done. I love to cook, try new recipes, and make my own creations. I finally have time to put the effort into dinner again and I am loving it.
My husband's office has a chili cook off every year and we have participated for the last couple years. This year we decided to try something different - using ground venison instead of ground beef. Venison is a lean meat so it eliminates a lot of the grease. We ended up getting some ground venison from my mom's boyfriend this year so we decided to put it to good use. If you have never eaten venison this is a great way to try it because you can barely tell the difference.
|Yes that is a crock pot liner - I love them.|
1 lb Ground Venison
2 Jalapeno Peppers, chopped
2 Medium Onions, chopped (I used the Ninja to do this)
2 Cloves of Garlic (I used the minced garlic in the jars at the supermarket)
15 oz can Black Beans (drained)
2 15 oz cans of Red Kidney Beans (drained)
30 oz can Crushed Tomatoes
30 oz can Tomato Sauce
1 tsp Oregano
6 tsp Chile Powder
2 tsp Red Pepper Flakes
2 tsp Salt
1 tsp Black Pepper
Brown the venison in a pan. Drain (though there should not be much to drain because Venison is a lean meat) and add onions, peppers, & garlic to the pan. Cook for another 5 minutes.
Add all ingredients to the slow cooker and mix together.
Cook on low for 4 hours.
Bake some corn muffins/bread and enjoy
Optional Toppings: sour cream, croutons, Greek yogurt, onions, anything you want really.
***We did not win the cook off, but it had good reviews.
Thanks for letting me visit and share my recipe. Enjoy!
