Green "Eggs" Breakfast | Read Across America Week

In honor of Read Across America Week I decided to make a green "egg" breakfast! Being that my daughter is not the biggest egg fan, we made these imitation eggs for a fun breakfast!

Here's how:

Make your pancake mix (we have a great recipe here for homemade - it's easy!) 

Separate about 1/2 cup and dye it green. (You won't need much at all. If you are only making a couple, you won't even need 1/2 cup)

Make some green pancake pops. If you don't have a cake pop maker...you need to add that baby onto your wish list! I used mine to make green pancake pops, but you can also do this in a mini muffin tin (and use the tops only). 

Now cut your pancake pops in half (these will be the "yolk").

With your regular pancake mix, make your pancakes in egg shapes. 
Now all you need to do is assemble your "eggs".
Fun, huh? You can even cut up some strawberries and bananas, add a base of cool whip and stack them for a Cat in the Hat side of fruit!

It sure was a hit here!

  1. I don't have a cake pop maker but have thought about it. How practical is it ? I have limited kitchen storage and it hard to explain to the hubby why I need another appliance ;-)
